Recipe: What to do when your flour gets infested

So, I went to make these banana crumble muffins I saw at Allrecipes.com last week, and heartily started mashing three ripe bananas that the recipe called for. As I went to scoop up some whole-wheat flour, I discovered that the small dark brown flecks of whole wheat were MOVING!

Recipe: Tilapia Curry

This is one of my favourite recipes. You can use frozen tilapia, but I prefer fresh tilapia fillets.

Ingredients


  • 1 lb tilapia fillet cut into 8 pieces

  • salt (to taste)

  • 1 tsp tumeric

  • 1 tbsp oil

  • 2 medium onions, chopped

  • 2 tsp garlic

  • 2 tsp ginger

  • 1 tsp cumin powder

  • 1 tsp corriander

  • 1 tsp red chilli powder

  • 2 medium tomatoes, chopped

  • 4-6 green chillies

  • optional 1 green bell pepper (or any bell pepper)

  • water (enough to make some gravy)

  • 1/2 tsp lemon juice


Preparation

- wash fish with water and then with lemon juice

- coat with salt, turmeric, chilli powder and set aside so that it can marinate for a bit

- chop ingredients in the meantime

- heat oil, saute fish and set aside

- fry onions, add garlic, ginger, a bit more red chilli powder, turmeric, cumin, corriander and stir fry

- add tomatoes and stir fry

- add salt

- add fish

- add green chillies, green pepper (optional) and water

- cover and cook 5-10 minutes

- add lemon juice

- simmer



Serve over brown (or white) rice -I prefer brown rice (Brown Basmati rice is great!)

Recipe: Pan-roasted Spiced Corn Salad

My sister passed on this recipe to try for our Mother's Day BBQ and it fared quite well.



Ingredients


  • 2 tsp cumin seeds

  • 1/2 tsp fennel seeds

  • 2 dried red chillies

  • 1 lb frozen corn

  • 2 tbsp corn oil or canola oil

  • 1 small onion, chopped

  • salt (to taste)

  • 1 red bell pepper, chopped

  • 3 tsp cilantro, chopped and some to garnish

  • mixed greens


Preparation

- dry roast the cumin, fennel and red chillies in a skillet.  When cool, grind all three into a powder

- fry the frozen corn in a skillet until excess water is evaporated and the corn is crunchy, set aside

- fry the onions in the oil

- add corn, salt and ground spice

- cook for 2 min

- add red pepper and cilantro

- serve over a bed of mixed greens and garnish with cilantro

Recipe: Cooking Light's Chocolate Cupcakes

Let me tell you, my husband made these for me the other night and they are fantabulous...everyone should taste how heavenly these are!! You'll never go out and buy another chocolate cupcake again! I promise. They're light, but not light in that 'omg this is so healthy I can taste the flour before it was ground' light, it's still sweet enough and chocolately enough that you feel like you can have 10. And you just might.

So, here it is:

Ingredients

 

Cupcakes:
3/4 cup granulated sugar
5 tablespoons butter or stick margarine, softened
1 teaspoon vanilla extract
2 large eggs
1 cup all-purpose flour
1/4 cup unsweetened cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup fat-free milk


Frosting:
1 tablespoon butter or stick margarine
1/4 cup granulated sugar
3 tablespoons fat-free milk
1 ounce unsweetened chocolate, chopped
1 3/4 cups powdered sugar
1 teaspoon vanilla extract

 


Preparation


Preheat oven to 350°.To prepare cupcakes, beat first 3 ingredients at medium speed of a mixer until well-blended (about 3 minutes). Add eggs, 1 at a time, beating well after each addition. Lightly spoon flour into a dry measuring cup, and level with a knife. Combine flour, cocoa, baking soda, and salt, stirring well with a whisk. Add flour mixture to sugar mixture alternately with 1/2 cup milk, beginning and ending with flour mixture; mix after each addition.

Spoon the batter into 12 muffin cups lined with paper liners. Bake at 350° for 22 minutes or until cupcakes spring back easily when touched lightly in the center. Cool in pan 10 minutes on a wire rack, and remove from pan. Cool completely on wire rack.

To prepare frosting, melt 1 tablespoon butter in a small, heavy saucepan over low heat. Add 1/4 cup granulated sugar, 3 tablespoons milk, and chopped chocolate, and cook 3 minutes, stirring constantly. Remove from heat, and cool. Stir in the powdered sugar and 1 teaspoon vanilla. Spread frosting over cupcakes.
